This is one of those meals that feels comforting, works for picky eaters, and makes great leftovers. Bonus: it comes together fast and smells amazing.
1½ lbs boneless chicken thighs or breasts
¼ cup honey 🍯
⅓ cup soy sauce (or coconut aminos)
3 cloves garlic, minced
1 tbsp olive oil
1 tsp ground ginger (or fresh if you’re fancy 😉)
Cooked rice (white or brown)
Steamed broccoli or green beans
Heat olive oil in a large skillet over medium heat.
Add chicken and cook until lightly browned on both sides.
In a small bowl, whisk honey, soy sauce, garlic, and ginger.
Pour sauce over chicken and reduce heat to low.
Simmer 10–12 minutes, flipping chicken occasionally, until cooked through and sauce thickens slightly.
Serve over rice with veggies on the side (or mixed right in).
